Comments: The backdrop of the staggering Tabor mountain in the department of Cauca, Colombia serves as home for this delightful bean, grown in the familiar Inza region. Set amongst banana and ice cream bean trees in the quaint mountain village of Pedregal, it's no wonder the undertones of yellow fruit and milk chocolate transfer to the cup. Producers in this tight knit village focus on selecting appropriately ripe cherries and depulping each one by hand, ensuring optimal quality from the very start of harvest.
We've arrived at a softer development on the bean, to showcase the balance between the juicy and sugary notes that play nicely in the cup. It's reminiscent of our previous Inza Colombia offering, but the juiciness of this coffee is more prevalent than its counterpart.
