Practicing dentist by day and news columnist regularly, Rodrigo Palaez seems like an unlikely coffee producer. But a passion for the crop, a commitment to helping the region's small farmers, and loosened restrictions on processing led him to try his hand in the world of coffee production.
He began experimenting with fermentation and natural processes to craft something consistent with an outstanding experience in the cup. Enter Finca Villa Ines. While the Laderas del Tapias Estate hosts four plots of coffee, Villa Ines has proven to be the standout of the land, and a favorite of our coffee-consuming community.
This single origin, Colombian Caturra has an apricot-forward presence in the cup, with smooth white riesling notes and a soft almond finish. It's one of the team's favorites on espresso. But honestly, we'll take it however you serve it. This natural has proven to create unique experiences, no matter the brewing method or drink recipe. If you're looking for something a bit more special and a coffee made to impress, Ines provides a little spontaneity in your otherwise typical coffee routine.

    Probably the most unique coffee I’ve had from Purefi. Perfectly roasted and the light fruit/berry notes are outstanding. I’ve used it both in espresso and V60 with great results. Highly recommend

    This is a natural processed coffee with a distinct fruit flavor. If you like that kind of coffee, this won’t disappoint.

    I brewed this on an aeropress (11g coffee, 200g water fresh off the boil, 2:30 steep) and was a lighter cup with a faint berry taste.

    I brewed most of it as espresso (20g in, 40g out, 30s including 10s preinfusion at 2 bar. 96C). Distinct berry, sweet and on the acidic side.

    This is an excellent coffee.
